Ginger (Trinity Roots) Toast

3 slices of organic sprouted, whole grain bread – toasted
One ripe organic avocado, pitted and thinly sliced
3-4 ripe organic tomatoes, thinly sliced
Freshly ground organic black pepper
Salt (black salt is excellent – found in the Indian or Middle Eastern market)

Ginger (Trinity Roots) Topping – Makes extra:

1-2 tablespoons organic coconut oil
1 large organic yellow onion, finely chopped or use food processor
1 head of organic garlic, peeled – mince or use food processor
1 large piece of organic ginger, coarsely chopped or use food processor
Freshly ground organic black pepper

Heat the coconut oil in a large saucepan, add the prepared onions, garlic and ginger. Grind a little black pepper onto the mixture. Sauté until the onions are translucent and soft, about 5-10 minutes.

Spread a thick layer of the ginger mixture on the prepared toast slices. Top with a layer of sliced avocado and tomatoes. Grind fresh black pepper over the top and sprinkle with salt.

Serve with extra tomato and avocado slices on the side if desired.
